One of the things I enjoy most about being in Australia at the moment is the constant access to yummy, fresh and juicy fruit all day long. Mango season is just about to end and the supermarkets are full with ripe mangos and other tropical fruit. Somewhere amidst all of my fruit shopping, I forgot about a couple of bananas that were still waiting to be eaten. Once I noticed them, they were overripe already – and I really don’t like to eat bananas when they are all mushy and soft. But I also hate throwing food away – so what to do?
Easy: Banana muffins! My Australian friend provided me with an extremely simple and fast, but surprisingly tasty recipe for Australien banana muffins with chocolate – a truly delicious treat at any time of the day (or night).
Here’s what you need to make them:
Australian banana muffins with chocolate
2 very ripe bananas
1/2 cup milk
2 cups self-raising flour OR 2 cups plain flour and 2 teaspoons baking powder
1/3 cup vegetable oil
1/2 cup sugar
1 cup chocolate (chips or chopped)
Mash the bananas with a fork in a big bowl. Then add all other ingredients but the chocolate and stir well.
Add the chopped chocolate last and stir once more.
Finally, fill paper muffin liners with the dough.
Bake at 160° for approximately 20mins. The muffins taste best when they are still a little warm!
